A fridge thermostat's numbers are relative settings, not degrees. The dial that's stayed on five for years was calibrated by trial in that one kitchen, and nobody's redone the trial.

Why doesn't the dial just say what temperature it's set to?
Because the numbers on a fridge thermostat aren't a temperature scale at all — they're positions on a mechanical switch, each one changing how long the compressor runs, and the actual temperature that setting produces depends on the fridge, the kitchen and the season it's standing in.
The same numeral in two different kitchens can land at two different temperatures, because the dial is telling the compressor how hard to work, not promising a number of degrees at the end of it. A manual can suggest a starting point, nothing more precise than that — what the dial should actually sit on gets worked out afterward, in that specific fridge.
So how did five become the number, if nothing tells you directly?
By checking, over time, whether things in the fridge were freezing at the front or turning too soon at the back, and nudging the dial until neither was happening — the number itself is just wherever that process stopped.
That's a slower, more repeated kind of test than a single reading: open the fridge over several days, notice what's too cold or not cold enough, adjust, and check again. Once a setting stops producing problems, there's no reason to keep adjusting it — which is exactly the point where a dial stops moving and starts collecting wear in one spot instead of an even ring all the way round.
What does the tape saying DON'T actually protect?
Not the dial itself, which turns freely whatever's written next to it — it protects the work that went into finding five in the first place, which nobody currently in the kitchen necessarily witnessed or could redo from scratch.
A new setting might turn out fine, or it might take a week of soft vegetables and a slightly warm milk bottle to notice it wasn't. The tape is cheaper than that week — a flat instruction standing in for a test that already happened once and doesn't need repeating.
Whose permission do you need to print somebody's fridge dial?
Nobody's — a setting worked out by trial in one kitchen isn't a method anyone owns, and the dial drawn here carries no manufacturer's name or branding, just plain numerals on a generic face.
What would need clearing is an actual appliance maker's specific dial design or logo. This one is generic on purpose, standing in for the shape of the habit rather than any particular model of fridge.
Does this logic hold for settings besides a fridge dial?
Yes — anything adjusted by trial rather than read off a scale carries the same risk once it's handed to somebody who wasn't there for the trial.
A rule that outlived the reason everyone gives for it sits in the same territory from a different angle — a number or a habit that keeps getting followed after the original working-out behind it has stopped being common knowledge in the house.
Isn't leaving a setting untouched just avoiding the work of finding a better one?
Untouched is what a setting looks like once it stopped causing problems, not a setting nobody's gotten around to checking — the two look identical from the outside and mean opposite things.
Testing a new number costs a real week of soft vegetables or a warm bottle of milk to find out it was wrong; leaving the proven number alone costs nothing at all. Where re-testing does pay off is when something changes around the dial — a new fridge, a different kitchen, a different household's habits — because then the original trial no longer applies to the conditions actually in front of it.

One ink: graphite grey on enamel white, with the pointer and the worn numeral kept slightly brighter than the rest of the rim to read as polish rather than damage. The tape sits as its own flat shape, not shaded to match the dial.
